Ingredients (18)

250.00 ml sugar
4.00 eggs — just the yolks
300.00 g white chocolate
500.00 ml cream
30.00 ml Sheridans gelatine
200.00 g strawberries — marinated in wine
WINE PUDDING
250.00 ml sugar
3.00 eggs
1000.00 ml flour — cake
500.00 ml wine — white
5.00 ml Bicarbonate of soda
150.00 g almonds — roasted, chopped
100.00 g dark chocolate
15.00 ml butter
CHOCOLATE BISCUIT
60.00 ml butter
60.00 ml icing sugar
30.00 ml cocoa powder
80.00 ml flour

Method:

MOUSSE:
Cream sugar and eggs until thick and creamy. Melt chocolate in microwave or double boiler.
Whip cream until just stiff. Dissolve gelatine in cold water over a bowl of warm water.
Fold chocolate into egg mixture, fold in puréed strawberries and gelatine, then pour into moulds and chill.
WINE PUDDING:
Cream sugar and eggs until thick and creamy. Add flour and wine, and mix until it acquires a dropping consistency.
Fold in bicarbonate and roasted nuts, melt chocolate and fold in.
Butter moulds, pour in the pudding mixture and bake in a preheated 180 ºC oven for about 15 minutes.
BISCUIT:
Cream butter and sugar, add eggs and mix in dry ingredients. Chill before baking at 180 ºC for 10 to 15 minutes.
