    vanilla ice cream
  • extra whipped cream
 

Method

 
Process 150 g fresh strawberries in a food processer. Heat the orange juice and dissolve the jelly in it. Add the processed strawberries and blend. Cool until the mixture just begins to set. Fold in the stiffly whipped cream. Pour into 6 small soufflé dishes. Cool until set. Process another 75 g fresh strawberries in the food processer. Add the strawberry jam and lemon juice and mix. Halve the remaining strawberries. Turn each soufflé dish of the strawberry cream out into the centre of a small plate. Arrange the halved strawberries around the turned out soufflés and pour the sauce over. Place two slices of ice cream on each plate. As a final touch add a caramel cage (optional), whipped cream and mint leaves.
