Strawberry cream

  • 500
    g
    strawberries, rinsed and hulled
  • 75
    ml
    castor sugar
  • 1
    juice of a lemon
  • 15
    ml
    Frangelico liqueur
  • 200
    g
    cream cheese
  • 150
    ml
    icing sugar
  • 5
    ml
    vanilla essence
  • 10
    ml
    gelatine, soaked in water
  • 30
    ml
    water
  • 250
    ml
    cream, chilled
 

Method

 
Cut the strawberries into small pieces and mix with the sugar, lemon juice and liqueur. Press through a sieve and set aside. Blend the cream cheese with the icing sugar and vanilla essence and stir in two-thirds of the strawberry puree. Heat the remaining strawberry puree and add the gelatine. Stir until the gelatine has melted and stir into the cream cheese mixture. Whip the cream until stiff and fold into the cream cheese mixture. Pour into a dish and chill until set. Serve with extra strawberry puree and whole strawberries. Serves 4.
