Ingredients (5)

2.00 kg strawberries — or raspberries
625.00 ml vinegar — cider
7.00 ml french mustard
3.00 ml mixed spice — ground
425.00 ml white granulated sugar

Method:

1. Combine strawberries and vinegar in a large saucepan. Bring to boil and simmer uncovered for 10 to 15 minutes.
2. Add mustard and spice, simmer for a further 30 minutes, uncovered. Strain mixture into a clean pan through a metal sieve, discard fruit.
3. Over a medium heat, dissolve sugar in cider, without boiling. Bring to the boil and simmer for 30 minutes. Pour into sterilised jars and seal when cold. Use this fragrant sauce to flavour curries or to accompany smoked gammon slices. Once sauce has been used, keep jar in the refrigerator.
