Strawberry, bacon and spinach salad

  • a few young spinach leaves, well rinsed, stems removed and shredded
  • 500
    g
    strawberries, cut into pieces
  • 125
    g
    bacon, chopped
  • olive oil
  • 65
    ml
    balsamic vinegar
  • croutons
  • blue cheese, crumbled
 

Method

 
Arrange the spinach leaves on a salad platter and place the strawberries on top. Fry the bacon in a little olive oil until crisp and scatter over the salad, adding the pan fat. Add the balsamic vinegar to the hot pan and return to the heat, loosening the coagulated cooking juices. Pour the hot vinegar over the salad and top with croutons and crumbled blue cheese.
