Strawberry and meringue cake

    vanilla ice cream
  • 375
    strawberries (puréed)
  • 8
    small meringues
  • 250
    fresh cream


Line a large loaf tin with cling wrap.
Soften ice cream slightly and fold in strawberry purée.
Place half of the meringues in the tin and spread half of the ice cream mixture over.
Repeat with another layer of meringues and ice cream. Place in the freezer until frozen.

To serve:
invert tin over a plate, peel the cling wrap off and top with whipped cream.

CookÆs note:
Add a dash of your favourite fruit liqueur to the ice cream for extra bite.
