Strawberry and goat's cheese salad with poppy seed dressing

  • 60
    ml
    olive oil
  • 45
    ml
    balsamic vinegar
  • 5
    ml
    poppy seeds
  • salt and ground pepper
  • SALAD
  • 250
    g
    fresh strawberries
  • watercress, washed
  • rocket leaves, washed
  • 150
    g
    goat's cheese or feta (look out for reduced-fat feta)
 

Method

 
Mix dressing ingredients together. Wash, hull and halve strawberries. Toss berries and dressing together and macerate for at least 15 minutes. Arrange salad leaves and cheese on a shallow plate, add strawberry mixture and serve with crusty bread. Per serving: 1 100 kJ; 7 g carbohydrate; 6,6 g protein; 24 g fat
