Strawberry Pavlova II

Strawberry pavlova

Ingredients

    large egg whites
  • pinch of salt
  • 240
    g
    castor sugar
  • 5
    ml
    vinegar
  • 5
    ml
    vanilla essence
  • 15
    ml
    cornflour
  • FILLING
  • 250
    ml
    cream, whipped
  • 250
    g
    fresh strawberries, sliced
 

Method

1 hour 30 minutes plus cooling time
 
Grease and line a baking tray. Beat egg whites with salt until soft peaks form.
Continue beating and add the sugar, vinegar and vanilla essence. Beat until thick and glossy and fold in the cornflour.
Pile the mixture in the centre of the baking tray and make a hollow in the middle for the filling.
Bake in a preheated oven for 10 minutes. Turn the oven down to 130&edeg;C and bake for a further 1½ hours.
Turn off the oven and leave the pavlova in the oven until cool.
Top with whipped cream and decorate with strawberries (or whatever fruit you prefer).
