Strawberries and Graham Beck Brut

  • 500
    g
    very ripe strawberries
  • 1.50
    lemons, the juice
  • 45
    ml
    castor sugar
  • 750
    ml
    bottle Graham Beck Brut, chilled
 

Method

 
Hull strawberries, wash carefully, and lay out on a cloth to dry - make sure they're completely dry.
Cut the strawberries in half and put them in a food processor with the lemon juice and sugar.
Pulse-chop to a liquid pulp.
Strain the pulp through a fruit sieve.
Mix equal parts of strawberry and Graham Beck Brut in a cocktail shaker.
Pour into champagne glasses using the perforated top of the shaker, as the drink will otherwise fizz up and over.
