Ingredients (4)

500.00 g strawberries
1.50 lemons — juice only
45.00 ml castor sugar
750.00 ml wine — sparkling wine

Method:

Hull strawberries, wash carefully, and lay out on a cloth to dry – make sure they’re completely dry.
Cut the strawberries in half and put them in a food processor with the lemon juice and sugar.
Pulse-chop to a liquid pulp.
Strain the pulp through a fruit sieve.
Mix equal parts of strawberry and Graham Beck Brut in a cocktail shaker.
Pour into champagne glasses using the perforated top of the shaker, as the drink will otherwise fizz up and over.
