Stir-fry with samp

    uncooked samp
  • oil for frying

    rump steak, cut into strips
  • 2
    onions, sliced
  • 5
    cloves garlic, crushed
  • 1
    chilli, seeded and chopped
  • 2
    green peppers, sliced
  • 5
    carrots, cut into strips
  • 1
    head of cabbage,shredded
  • 250
    g
    button mushrooms, halved
  • salt and pepper
  • 5
    ml
    ground ginger
  • 5
    ml
    mixed herbs
  • 30
    ml
    soy sauce
 

Method

 
Soak the samp in water overnight. Drain and boil slowly until soft. Add salt towards the end of the cooking period. Heat the oil in a large pan. Brown the meat strips in the oil. Set aside. Sauté the onion, garlic and chilli until soft. Set aside. Sauté the green pepper, carrot and cabbage together until nearly soft. Add the mushrooms, ground ginger, mixed herbs and soy sauce and season to taste with salt and pepper. Add all the other ingredients, mix and heat until warmed through. Spoon into a serving dish.
