Stir-fry with pork sausages

    pork sausages
  • oil for frying
  • 10
    ml
    fresh root ginger
  • 1
    clove garlic, crushed
  • 4
    leeks, sliced
  • 1
    green pepper, cut into strips
  • 300
    g
    baby corn on the cob
  • courgettes, thickly sliced
  • 2
    carrots, cut into julienne strips
  • 30
    ml
    soy or oyster sauce
  • salt and freshly, ground black pepper
 

Method

 
Place the sausages in a saucepan with water and heat until the water just comes to the boil. Cut the sausages into smaller pieces if they are very big. Brown in a little oil, remove from the pan and set aside. Sauté the ginger, garlic, leeks and green pepper in the oil until soft. Add the mealies, courgettes and carrot strips and stir-fry until pale brown. Add the sausages, pour over the soy sauce and stir-fry until heated through. Season with black pepper and salt if necessary. Serve immediately with rice or noodles. Serves 4-6.
