Stir-fry beef with lemon grass and mushrooms

Ingredients (14)

250.00 g rice — basmati, uncooked
400.00 g beef — fillet, thinly sliced
2.00 lemongrass — chopped
2.00 red chillies — chopped
6.00 garlic — cloves, minced
45.00 ml fish sauce
5.00 ml cornflour
black pepper — freshly ground
50.00 ml oil
2.00 onion — sliced
100.00 g mushrooms
5.00 ml sugar
50.00 g peanuts
fresh coriander — to garnish

Method:

Prepare rice according to packet instructions.
Combine steak, lemon grass, chillies, half the garlic, 30 ml (2 tbsp) fish sauce, cornflour, black pepper and 30 ml (2 tbsp) oil in a bowl. Marinate for 30 minutes.
Heat 15 ml (1 tbsp) oil in a wok over medium heat and add onions and remaining garlic. Stir-fry until golden brown. Remove and set aside.
Increase heat, add 5 ml (1 tsp) oil and, when very hot, add steak, mushrooms, remaining fish sauce and sugar. Stir-fry for 2 minutes.
To serve, place rice on a warmed dish and arrange onions and beef on top. Sprinkle over peanuts and coriander sprigs.
