Stir-fry beef with lemon grass and mushrooms

    fillet steak, finely sliced

    stalks lemon grass, chopped
  • 2
    red chillies, chopped
  • 6
    garlic cloves, minced

    fish sauce
  • 5
    ml
    cornflour
  • freshly ground black pepper
  • 50
    ml
    oil
  • 2
    onions, sliced
  • 100
    g
    fresh mushrooms
  • 5
    ml
    sugar
  • 50
    g
    peanuts
  • fresh coriander to garnish
 

Method

 
Prepare rice according to packet instructions. Combine steak, lemon grass, chillies, half the garlic, 30 ml (2 tbsp) fish sauce, cornflour, black pepper and 30 ml (2 tbsp) oil in a bowl. Marinate for 30 minutes. Heat 15 ml (1 tbsp) oil in a wok over medium heat and add onions and remaining garlic. Stir-fry until golden brown. Remove and set aside. Increase heat, add 5 ml (1 tsp) oil and, when very hot, add steak, mushrooms, remaining fish sauce and sugar. Stir-fry for 2 minutes. To serve, place rice on a warmed dish and arrange onions and beef on top. Sprinkle over peanuts and coriander sprigs.
