Ingredients (8)

2.00 leeks — onion, halved and sliced in thin rings
4.00 carrot — julienned
100.00 g green beans — halved
100.00 g broccoli — florets
3.00 courgettes — baby, strips
pepper — green, yellow and red, deseeded and sliced
250.00 g mushrooms — sliced
1.00 cabbage — white, shredded

Method:

Slice all the vegetables ensuring the pieces are about the same size as this ensures even cooking. Heat a little oil until hot in a largish pan. Reduce the heat and stir-fry the leeks, carrot strips and beans until the leeks are tender and translucent. Add the broccoli, baby marrows and peppers and continue stir-frying. Lastly, add the mushrooms and cabbage and stir-fry until done but crunchy. Cover and turn off the heat Serve with the chicken and rice.
