Stir-fried vegetables

    onions, sliced

    cloves garlic, crushed

    green pepper, cut into strips
  • oil
  • 300

    fresh button mushrooms, halved
  • 250

    courgettes, sliced

    tomato paste
  • 20
    ml
    dry sherry
  • 410
    g
    whole kernel corn, drained
  • 2
    ml
    thyme
  • 150
    ml
    cream
  • 15
    ml
    lemon juice
  • salt and freshly ground black pepper
  • chopped fresh parsley to garnish
 

Method

 
In a skottelbraai, sauté the onion, garlic and green pepper in a little oil until soft. Add the mushrooms and courgettes and stir-fry until pale brown. Add more oil, if necessary. Add the remaining ingredients and stir-fry for another 5 minutes or until a nice thick sauce is formed. To garnish, sprinkle with chopped parsley. Serves 4-6.
