Ingredients (6)

SYRUP
125.00 ml brown sugar — soft
30.00 ml butter
65.00 ml water
20.00 ml lemon juice
1.00 ml salt
500.00 g sweet potatoes — peeled, diced

Method:

Place all the syrup ingredients in a saucepan and heat until the sugar and butter have melted. Stir continuously. Boil for 2 minutes. Add the diced sweet potato, reduce the heat and stir-fry until the diced sweet potato is cooked and glossy. If the syrup dries up before the sweet potatoes are done, add a little water to the saucepan.
Serves 4.
