Stir-fried sweet potatoes

  • SYRUP
  • 125
    ml
    soft brown sugar
  • 30
    ml
    butter
  • 65
    ml
    water
  • 20
    ml
    lemon juice
  • 1
    ml
    salt
  • 500
    g
    uncooked sweet potatoes, skinned and diced
 

Method

 
Place all the syrup ingredients in a saucepan and heat until the sugar and butter have melted. Stir continuously. Boil for 2 minutes. Add the diced sweet potato, reduce the heat and stir-fry until the diced sweet potato is cooked and glossy. If the syrup dries up before the sweet potatoes are done, add a little water to the saucepan. Serves 4.
