Stir-fried spinach with lemon and cashew nuts

Ingredients (8)

30.00 ml fresh chillies — 573
300.00 g spinach — chopped
10.00 ml lemon juice
100.00 g olives — black, chopped
60.00 ml pesto — basil
100.00 g cashew nuts
salt
black pepper — freshly ground

Method:

Heat olive oil in a large frying pan. Add spinach and stir-fry for 2-3 minutes, or until the spinach has wilted. Add the remaining ingredients and warm through. Serve with pan-fried pork medallions, pies, grilled chicken breasts or fish cakes.
Serves 6 as a side dish.
