Stir-fried spinach with lemon and cashew nuts

    olive oil
  • 300
    g
    spinach, thoroughly rinsed and chopped
  • 10
    ml
    lemon juice
  • 100
    g
    black olives, chopped
  • 60
    ml
    basil pesto
  • 100
    g
    cashew nuts
  • salt
  • freshly ground black pepper
 

Method

 
Heat olive oil in a large frying pan. Add spinach and stir-fry for 2-3 minutes, or until the spinach has wilted. Add the remaining ingredients and warm through. Serve with pan-fried pork medallions, pies, grilled chicken breasts or fish cakes. Serves 6 as a side dish.
