Stir-fried savoury rice

    sunflower oil
  • 2
    garlic cloves, chopped
  • 2
    onions, sliced
  • 2
    eggs, lightly beaten
  • 250

    mixed white and wild rice, cooked and drained
  • 200
    ml
    leftover chicken, shredded
  • 200
    ml
    leftover ham, chopped
  • 1
    chilli, chopped (or more to taste)
  • 5
    ml
    brown sugar
  • 10
    ml
    fish paste
  • 30
    ml
    lemon juice
  • 30
    ml
    soy sauce
  • 50
    g
    roasted peanuts
  • salt and freshly ground black pepper
 

Method

20 minutes
 
1. Heat oil in a large frying pan or wok. Add garlic and onion and sauté until browned. 2. Add egg and mix to scramble. 3. Add cooked rice along with remaining ingredients. Stir-fry until warmed through. Season to taste with salt and freshly ground black pepper and serve.
