Ingredients (19)

SALAD
lettuce — shredded
2.00 garlic — cloves, crushed
10.00 ml fresh ginger — finely grated
oil
5.00 carrots — julienned
2.00 celery stalks — thinly sliced
100.00 g broccoli — broken into florets
200.00 g button mushrooms — sliced
100.00 g green beans — young, topped and tailed
bean sprouts
4.00 spring onions — chopped
SALAD DRESSING
1.00 garlic — cloves, crushed
5.00 ml fresh ginger — grated
100.00 ml sunflower oil
50.00 ml vinegar — grape
15.00 ml sherry
15.00 ml soy sauce
5.00 honey
salt and freshly ground black pepper — to taste

Method:

Arrange the shredded lettuce on a flat salad platter.
Stir-fry the garlic and ginger in a little heated oil. Add the remaining vegetables and stir fry till just soft but still slightly crisp. Arrange on the shredded lettuce.
Blend all the ingredients for the salad dressing and pour over the salad. Serve hot or cold.
Serves 4-6.
