Stir-fried salad

Ingredients

  • SALAD
  • few lettuce leaves, well rinsed and shredded (optional)
  • 2
    cloves garlic, crushed
  • 10

    fresh ginger, finely grated
  • oil

    medium-sized carrots, cut into julienne strips
  • 2
    stalks celery, thinly sliced
  • 100

    broccoli, broken into florets
  • 200

    fresh button mushrooms, sliced
  • 100

    young green beans, topped and tailed
  • few beansprouts
  • 4
    spring onions, cut into pieces
  • SALAD DRESSING
  • 1
    clove garlic, crushed
  • 5
    ml
    fresh ginger, grated
  • 100
    ml
    sunflower oil
  • 50
    ml
    grape vinegar
  • 15
    ml
    sherry
  • 15
    ml
    soy sauce
  • 5
    -10 ml honey
  • salt and freshly ground black pepper to taste
 

Method

+/- 10 min
 
Arrange the shredded lettuce on a flat salad platter. Stir-fry the garlic and ginger in a little heated oil. Add the remaining vegetables and stir fry till just soft but still slightly crisp. Arrange on the shredded lettuce. Blend all the ingredients for the salad dressing and pour over the salad. Serve hot or cold. Serves 4-6.
