Ingredients (9)

50.00 ml fresh chillies — 573
750.00 g pork — leg, fillet or thick rib, strips
250.00 g mushrooms — thinly sliced
1.00 spring onions — a bunch, sliced
1.00 garlic — cloves, crushed
150.00 ml cream — fresh
60.00 ml pesto — basil
4.00 sun-dried tomatoes — drained and cut into strips
0.00 mozzarella cheese — grated

Method:

Heat the oil in a wok or heavy-based saucepan and stir-fry the pork strips quickly for eight to 10 minutes or until nearly cooked.
Add the mushrooms, spring onions and garlic, and continue frying for a few minutes.
Add the cream and basil pesto and heat through.
Stir in the sun-dried tomatoes and season with salt and freshly ground black pepper to taste.
Serve with basmati rice or penne pasta, sprinkled with grated mozzarella.
TIP
A combination of mushrooms, such as oyster, button and portabellini works really well in this dish.
