Stir-fried chicken with cashews

  • MARINADE
  • 1
    garlic clove, crushed
  • 30
    ml
    soy sauce
  • 1
    lime, juice and rind
  • STIR-FRY
  • 4
    chicken breast fillets, cut into strips
  • 30
    ml
    oil
  • 1
    x 2 cm piece fresh ginger, grated
  • 4
    garlic cloves
  • 2
    red chillies, seeded and finely chopped
  • 200
    g
    cashew nuts, chopped
  • 50
    ml
    chicken stock
  • 30
    ml
    soy sauce
  • 30
    ml
    oyster sauce
  • 30
    ml
    chopped chives
  • 6
    fresh basil leaves, torn into pieces
 

Method

 
Mix the ingredients for the marinade.
Add the chicken and marinate for 30 minutes.
Heat the oil in a large pan or wok.
Add the chicken and stir-fry for about three minutes.
Add the ginger, garlic and chillies and stir-fry for another two to three minutes.
Add the nuts an stir-fry for another three minutes.
Add the chicken stock and soy and oyster sauces and simmer for about three minutes.
Spoon into bowls and garnish with the chives and basil leaves. Serve with rice.
