Ingredients (8)

Relish: sweet piquanté peppers, chopped
4.00 tomatoes — chopped
250.00 ml brown sugar
250.00 ml vinegar — malt
12.00 garlic — cloves, crushed
125.00 ml fresh ginger — grated
2.00 star anise
Crisps: madumbis, peeled and sliced
30.00 ml sunflower oil — for frying
20.00 ml chilli salt

Method:

Place all the ingredients for the relish in a saucepan and bring to the boil. Simmer for 30 minutes or until the mixture turns jammy. Cool and cover until ready to eat. Heat the oil in a pan and fry the madumbis in batches. Drain on paper towel and sprinkle with chilli salt. Eat straight away with a bowl of sticky relish.
