Sticky ribs and corn fritters

    self-raising flour

    whole kernel corn, drained
  • sunflower oil for deep-frying
 

Method

 
MARINADE: Place all ingredients in a small bowl and mix well. Place ribs in a flat ceramic dish and pour marinade over. Cover and refrigerate for at least 4 hours but preferably overnight. Preheat oven to 200 ºC and roast ribs for 30 minutes, or until sticky and charred. Serve with corn fritters. FRITTERS: Place flour, salt, eggs and milk in a blender. Blend until smooth. Mix in corn with a spoon. Heat oil in a saucepan or deep fryer and drop in spoonfuls of batter. Fry until golden brown and cooked. Drain on kitchen paper. Serve at once.
