Ingredients (13)

2.00 kg pork ribs
MARINADE
45.00 ml honey
30.00 ml tomato sauce
10.00 ml mustard — powder
5.00 ml paprika
60.00 ml vinegar
30.00 ml sunflower oil
FRITTERS
125.00 g flour — self-raising
5.00 ml salt
2.00 eggs — medium
65.00 ml milk
410.00 g sweetcorn — tinned, drained
sunflower oil — for deep frying

Method:

MARINADE: Place all ingredients in a small bowl and mix well.
Place ribs in a flat ceramic dish and pour marinade over. Cover and refrigerate for at least 4 hours but preferably overnight.
Preheat oven to 200 ºC and roast ribs for 30 minutes, or until sticky and charred. Serve with corn fritters.
FRITTERS: Place flour, salt, eggs and milk in a blender. Blend until smooth. Mix in corn with a spoon.
Heat oil in a saucepan or deep fryer and drop in spoonfuls of batter. Fry until golden brown and cooked.
Drain on kitchen paper. Serve at once.
