Sticky picnic chicken

    red chillies, seeded and chopped
  • 15
    ml
    ginger, grated
  • 500
    ml
    water
  • 170
    ml
    soya sauce
  • 125
    ml
    white wine vinegar
  • 170
    ml
    sugar
  • 1.50
    kg
    chicken pieces
  • 250
    ml
    tomato jam
 

Method

35 minutes
 
Place the chillies, ginger, water, soya sauce, vinegar and sugar in a deep frying pan over medium heat and allow to simmer for 3 minutes.
Add the chicken pieces and cook, covered, for 30 minutes, turning occasionally.
Add the tomato jam, and turn the chicken until it is well coated in the sauce.
Serve with gherkins.
