0.00 cream — thick or mascarpone

Method:

Sift flour and salt into a mixing bowl.
Make a hollow in the centre.
In a small bowl, mix eggs, milk and butter.
Pour this mixture into the flour, stirring all the time with a wooden spoon.
Heat a 25 cm frying pan and add a little butter; don’t use too much.
Pour a ladle full of batter into the pan and swirl the mixture around.
Don’t let the pan get too hot.
Cook the pancake until edges start to brown, flip over and cook the other side.
Cook the remaining batter and keep warm.
FILLING:
Melt butter in the same frying pan and add pears.
Cook on one side until golden brown; turn over and add the maple syrup. Cook until soft.
Place a pancake on a plate and top with a couple of pears. Repeat layers.
Drizzle over the pan juices.
Serve with some thick cream or mascarpone.
Let everyone cut a yummy wedge for themselves.
