Stewed green beans

    g
    green beans
  • 2
    onions, sliced
  • 1
    green pepper, sliced
  • 1
    red pepper, sliced
  • 30
    ml
    olive oil
  • 2
    tomatoes, peeled and chopped
  • 5
    baby marrows, cut into rings
  • salt and pepper to taste
  • 20
    ml
    parsley
  • 40
    ml
    tomato purée
 

Method

 
Slice the beans into 4 cm lengths, blanch in boiling water for three minutes and drain.
Fry the onions, green pepper and red pepper in the olive oil until the onions are translucent.
Add the remaining ingredients and simmer over medium heat until the vegetables are soft.
