Stewed fruit in cinnamon and vanilla sauce

Ingredients (5)

500.00 g mixed dried fruit
500.00 ml water — lukewarm
75.00 ml sugar
1.00 vanilla — pod
1.00 cinnamon — stick

Method:

Soak the dried fruit in lukewarm water for 15 minutes. Drain and pour the water into a medium-sized saucepan. Add the sugar and heat until the sugar has dissolved.
Add the vanilla pod, cinnamon stick and fruit. Bring to the boil, reduce the heat and simmer slowly until the fruit is tender.
Remove from the heat and chill if serving cold.
Arrange crumpets in an oven dish and sprinkle liberally with brown sugar. Grill under the heated oven grill until the sugar begins to caramelise. Serve immediately with hot or cold stewed fruit.
