1.00 orange
1.00 lemon
250.00 ml apple juice
250.00 ml water
6.00 cardamom — whole seeds
6.00 cloves — whole
1.00 cinnamon — stick
1.00 vanilla — pod
10.00 prunes
10.00 apricots — dried
10.00 dates — pitted
25.00 ml currants
65.00 ml white sugar
65.00 ml brown sugar
15.00 ml pecan nuts — or pistachio nuts, chopped
25.00 ml almonds — flaked

Method:

Using a vegetable peeler, cut three wide strips of orange rind and three strips of lemon rind.
Cut the rest of the lemon rind into fine julienne strips.
Place the apple juice, water, whole spices and wide strips of citrus rind in a large saucepan and bring to the boil.
Add the dried fruit, remove from the heat and stand for two hours.
Drain the fruit and set aside.
Return the liquid to the saucepan along with the sugar and julienne strips of lemon rind.
Bring to the boil and simmer for 10 minutes or until the liquid is syrupy.
To take along on a picnic, spoon the fruit and syrup into a container with a tight-fitting lid and leave to cool.
Serve with nuts and custard or yoghurt.
