Steamed vegetable parcels

    baby marrows, cut into strips

    young green beans, topped and tailed
  • 4
    baby corn, halved lengthways
  • 1
    red or yellow sweet pepper, seeded and cut into julienne strips
  • 2
    carrots, peeled and cut into julienne strips
  • 4
    spring onions, halved
  • 8
    large spinach leaves


Bring a large saucepan of salted water to boil. Blanch all the vegetables for 3 minutes. Remove, refresh in a bowl of cold water and drain in a colander. Divide baby marrows, beans, corn, peppers and carrots into 4 piles. Wrap 1-2 spinach leaves around each pile, folding them so that tips of vegetables stick out. Secure with thin kitchen string, raffia or chives. Place parcels in a sieve or bamboo streamer over boiling water. Cover and steam for 3 to 4 minutes. Serve warm or cool.
