Ingredients (7)

3.00 courgettes — cut into strips
12.00 green beans — young, topped and tailed
4.00 baby corn — halved lengthways
1.00 pepper — red or yellow, julienned
2.00 carrots — peeled and julienned
4.00 spring onions — halved
8.00 spinach

Method:

Bring a large saucepan of salted water to boil. Blanch all the vegetables for 3 minutes. Remove, refresh in a bowl of cold water and drain in a colander.
Divide baby marrows, beans, corn, peppers and carrots into 4 piles.
Wrap 1-2 spinach leaves around each pile, folding them so that tips of vegetables stick out. Secure with thin kitchen string, raffia or chives.
Place parcels in a sieve or bamboo streamer over boiling water. Cover and steam for 3 to 4 minutes.
Serve warm or cool.
