Steamed lemon pudding

    butter
  • 100
    g
    castor sugar
  • 1
    pinch salt
  • 60
    ml
    milk
  • 2
    large eggs
  • 100
    g
    self-raising flour
  • 0.50
    lemon, the rind
  • whipped cream, to serve
  • 125
    ml
    homemade lemon curd
 

Method

 
In a mixing bowl, combine butter, sugar, salt, milk, eggs, flour and lemon rind. Mix well.
Place in a greased 1,4 litre pudding bowl. Cover bowl with waxed paper and tinfoil and secure tightly with string.
Place in a large pot filled with water two-thirds of the way up the side of the bowl.
Simmer for about two hours, refilling with water every so often.
When cooked, tip the pud out onto a plate and serve with whipped cream and lemon curd. See the recipe for homemade lemon curd.
