Steamed fish with chilli and lime

    medium-sized whole fish, cleaned
  • 3
    lemon grass stalks, chopped
  • celery and mint leaves
  • SAUCE
  • 190
    ml
    crushed or sliced hot chillies
  • 250
    ml
    crushed garlic
  • 190
    ml
    fish sauce
  • 250
    ml
    fresh lime or lemon juice
  • 5
    ml
    brown sugar
 

Method

 
Place cleaned fish on a plate suitable for steaming. Insert lemon grass in fish, place in a steamer and steam for 8 to 10 minutes, depending on size of fish. SAUCE: Mix ingredients well and boil for 10 minutes. Pour over and around hot fish. Serve immediately, garnished with celery and mint leaves.
