Steamed fish in ginger (pla peh sae)

    kingklip or kabeljou fillets, skinned and deboned

    water
  • 1
    chive, finely chopped
  • 2
    stalks celery, finely chopped
  • 1
    red pepper
  • 1
    green pepper
  • 1
    clove garlic, chopped
  • 5
    ml
    fresh ginger, finely grated
  • fresh coriander leaves
  • 10
    ml
    fish sauce
  • 10
    ml
    lemon juice
  • 5
    ml
    oyster sauce
  • 7
    ml
    sugar
  • salt and pepper
  • lemon, finely chopped, to serve
  • red and green chillies, chopped, to serve
 

Method

 
Blanch the fish in the water until it just begins to turn white. Add the rest of the ingredients (except the sauces, juice, sugar, salt and pepper) and heat until the vegetables are just done. Add the fish sauce, lemon juice, oyster sauce and sugar. Adjust the seasoning with salt, pepper, sugar and lemon juice. Serve with finely chopped fresh lemon and finely chopped red and green chillies. Serves 4.
