Rub the steak with some olive oil and season it with salt and pepper.
Heat a griddle pan until it is smoking hot and then place the steak in the pan.
Cook to your preference, I like it medium rare, so it took about 3 minutes each side.
In the meantime, place the cream and half of the cheese in a small pot and melt together and allow the cream to cook and reduce somewhat.
When the steak is done, allow to rest for about 5 minutes.
Cut steak into strips and start assembling your wraps with lettuce, slices of tomato, avocado, crumbled blue cheese and steak.
Drizzle with some of the blue cheese sauce, roll up and enjoy.
