    dressing: (1/2 cup) olive oil

    (1/4 tsp) tabasco sauce

    (1/2 tsp) worcestershire sauce

    (1T) brandy
  • 180

    (2/3 cup) lemon juice
  • 80

    (1/3 cup) chopped fresh herbs

    salt

    ml
    freshly ground pepper

Method:
1. Divide mince into 4 portions on serving plates. Top each portion with a egg yolk

2. Make dressing by mixing all ingredients together.

3. Serve steak tartare with dressing accompanied by Melba toast.
