Star anise and soy chicken with noodles

    free-range chicken
  • MARINADE:
  • 1/4
    cup
    Kecap Manis sweet Indonesian soy sauce
  • 1/4
    cup
    good quality light soy sauce
  • 3
    Tbs
    brown sugar
  • 3
    star anise
  • 1
    Tbs
    dry sherry
  • 1
    garlic clove, crushed
  • 1
    tsp
    finely grated ginger
  • Sea salt flakes and black pepper
  • NOODLES:
  • 300
    g
    ready-cooked noodles
  • 1
    packet spring onions, finely chopped
  • 120
    g
    mange tout, blanched and thinly sliced
  • 1/4
    cup
    peanut oil
  • 1/4
    cup
    orange juice
  • 1
    Tbs
    finely grated ginger
 

Method

15min + Standing time
 
Combine the marinade ingredients in a small pot, bring to the boil and simmer just until the sugar has dissolved. Season.

Using a pair of kitchen scissors, cut the chicken down the back bone and into two halves.

Rub the marinade onto chicken and marinade for four hours or overnight.

Preheat the oven to 200°C and cook the chicken for 45 minutes on each side. Leave to rest for a few minutes.

In the meantime, toss the noodles with the other ingredients. Divide the chicken into portions and serve with the noodles. Alternatively, shred the chicken and serve on top of the noodles.
