Ingredients

    potatoes, peeled and halved
  • 1
    small butternut, peeled and cut into 4 pieces
  • 6
    garlic cloves, peeled
  • 6
    baby leeks
  • 125
    ml
    (1/2 cup) cream
  • 250
    ml
    (1 cup) chicken stock
  • 125
    ml
    (1 cup) pecorino cheese, grated
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
 

Method

Preheat the oven to 180°C.

Place all the ingredients in a baking dish.

Cover a bake for 35 minutes.

Remove the cover and cook for another 15 minutes or until the vegetables are cooked and golden brown.
