Ingredients (9)

450.00 g potatoes
30.00 ml fresh chillies — 573
10.00 eggs — large
12.00 spring onions — sliced
40.00 g parmesan cheese — grated
8.00 fresh basil
salt and freshly ground black pepper
fresh chives — torn
2.00 tomatoes — peeled, seeded and chopped

Method:

1. Cook potatoes until just tender, drain and refresh in cold water. Peel and cube while still warm.
2. Preheat grill. Put a 22 cm greased frying pan over moderate heat. When hot, add olive oil. Beat four eggs in a bowl, pour into pan and swirl to cover the base. When just set, cover with potatoes and spring onions. Beat remaining eggs, adding 30 ml Parmesan cheese, basil and salt and pepper. Lower heat and cook for four minutes. Top with remaining cheese.
3. Transfer the pan to the grill and continue to cook under the grill, turning until just set. Slide out of the pan onto a board and slice. Garnish with chives and tomatoes and serve at room temperature.
