Ingredients (6)

250.00 ml custard — vanilla
500.00 g cottage cheese — creamed
30.00 ml rum — dark or brandy
400.00 g sponge fingers
80.00 ml nescafé strong black coffee
60.00 ml cocoa powder

Method:

Spray a deep 24 cm pie dish with non-stick spray.
Mix the custard and creamed cottage cheese. Add the rum and mix.
Dip each sponge finger in the coffee and arrange a layer in the bottom of the prepared pie dish. Cover with a layer of the custard mixture and dust with a little cocoa powder. Repeat the layers until all the ingredients have been used. End with a dusting of cocoa powder. Chill overnight.
Serves 6.
