2.00 spinach — chopped
1.00 spring onions — chopped
4.00 potatoes — peeled, quartered
15.00 ml peanut butter
salt and freshly ground black pepper

Method:

1. Place spinach, spring onion and potatoes in a saucepan. Cover and cook over low heat until soft, about 15 minutes.
2. Add peanut butter, mix through, season to taste and mash all the ingredients together.
