Spinach tramezzino

    rashers cooked bacon, shredded
  • 3
    spinach leaves, rinsed, shredded and sautéed in olive oil with garlic
  • 1
    round feta cheese, crumbled
  • few slices mozzarella cheese
  • 1
    focaccia bread, halved horizontally
  • 4
    slices tomato


Mix the bacon, spinach and feta cheese, and set aside. Arrange the mozzarella cheese on the bottom half of the focaccia bread. Top with the tomato slices and stack the spinach mixture on top. Cover with the top half of the focaccia and grill under the oven grill or in a toasted sandwich-maker until the bread is lightly browned and the cheese has just melted.
