Spinach tartlets

    baby spinach - washed and cooked until wilted, chopped.
  • 2
    Tbs
    butter
  • 1
    onion - finely chopped
  • 1
    garlic clove - finely chopped
  • 125
    g
    streaky bacon - finely chopped
  • 250
    ml
    sour cream
  • 250
    g
    garlic and herb flavored cottage cheese
  • 3
    large eggs
  • cup
    grated cheddar cheese
  • Salt and black pepper to taste

Preheat the oven to 190ºC.  Prepare an oven safe dish of about 20 cm x 20cm, greasing it with butter.

Heat the butter in a saucepan and sauté the onion and garlic until translucent. Then add the bacon. Cook until done. Set aside.

In a mixing bowl, add the sour cream, cottage cheese and eggs. Mix until incorporated. Now add the chopped cooked spinach, sautéed onion, bacon and cheese.

Mix well. Transfer to baking dish. Bake for 30 – 40 minutes or until set and brown.

Serve with fresh herb salad.
