Spinach stew

    onion, sliced
  • oil for frying
  • 1
    kg
    mutton neck chops
  • salt and pepper
  • 600
    g
    fresh spinach, shredded
  • 2
    cans tomatoes, chopped
  • 5
    ml
    nutmeg
  • parsley
 

Method

 
Sauté the onion in the oil until soft. Remove from the pan and set aside. Season the chops with salt and pepper and brown both sides. Add the spinach and chopped tomato, reduce the heat and simmer until the meat is tender. Season well with salt, pepper and nutmeg. Sprinkle with a little chopped parsley, if desired. Serve with rice.
