Spinach stem snacks

Ingredients

  • 300
    g
    spinach
  • salt and pepper
  • nutmeg
  • lemon juice
  • 140
    g
    self-raising flour
  • 1
    ml
    cayenne pepper
  • pinch salt
  • 150
    ml
    cold water
  • 15
    ml
    oil
  • 2
    egg whites, stiffly beaten
  • oil for deep-frying
 

Method

± 15 min
 
Remove the hard stems from the spinach leaves and cut into 3 cm pieces. (Boil in salted water until tender, drain well and freeze.) Combine the self-raising flour, cayenne pepper and salt in a mixing bowl. Add the water and oil and mix well. Add the stiffly beaten egg whites just before using the batter. Dip spinach stems in the batter and deep-fry in oil until golden brown. Drain on paper towelling. Serve hot as a snack. Makes about 40 snacks.
