Ingredients (10)

1.00 onion — finely chopped
1.00 garlic — cloves, crushed
900.00 g spinach — finely shredded
oil
2.00 Litres stock — chicken
500.00 ml milk
50.00 ml lemon juice
30.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
250.00 ml sour cream

Method:

Sauté; the onion, garlic and spinach in a little oil until tender. Add the chicken stock and milk and simmer for 10 minutes.
Strain the soup through a sieve and puré;e the spinach in a food processor. Return the puré;e to the liquid and add the lemon juice and parsley. Season with salt and pepper to taste and simmer for another few minutes.
Add the sour cream just before serving.
Serve with fresh bread.
