Spinach soup

    onion, finely chopped
  • 1
    clove garlic, crushed
  • 900
    g
    spinach, hard stems removed and finely shredded
  • oil
  • 2
    Litres
    chicken stock
  • 500
    ml
    milk
  • 50
    ml
    lemon juice
  • 30
    ml
    finely chopped parsley
  • salt and freshly ground black pepper
  • 250
    ml
    sour cream
 

Method

 
Sauté; the onion, garlic and spinach in a little oil until tender. Add the chicken stock and milk and simmer for 10 minutes. Strain the soup through a sieve and puré;e the spinach in a food processor. Return the puré;e to the liquid and add the lemon juice and parsley. Season with salt and pepper to taste and simmer for another few minutes. Add the sour cream just before serving. Serve with fresh bread. .
