    Cos lettuce
  • 1
    bunch tender spinach leaves
  • 250

    breakfast bacon, diced and fried until crisp
  • 8
    slices bread, diced and fried in oil (croûtons)
  • 50
    g
    bean sprouts
  • 4
    eggs, hard-boiled
  • SALAD DRESSING
  • 75
    ml
    oil
  • 50
    ml
    lemon juice
  • 65
    ml
    orange juice
  • 1
    clove garlic, finely chopped
  • 2
    ml
    sugar
  • 2
    ml
    mustard powder
  • salt and pepper to taste
 

Method

Remove all the leaves from the Cos lettuce, rinse well and arrange in the bottom of a shallow salad bowl. Cut or tear the spinach leaves into pieces and arrange on top of the lettuce.

Sprinkle the diced bacon, croûtons and bean sprouts on top. Grate or crumble the egg yolks finely and arrange in the centre of the salad. Chop the egg whites finely and sprinkle over the salad. Mix all the salad dressing ingredients and shake well. Pour over salad just before serving.
