Spinach roulade

    butter

    cake flour

    skimmed milk

    eggs, separated

    each finely chopped spinach and grated yellow patty pan squash
  • 250

    low fat cottage cheese
 

Method

 
Preheat oven to 180 ºC. Heat butter in a saucepan, add flour and whisk until smooth. Whisk in milk, then stir in egg yolks, spinach and patty pans. Take off stove. Whisk egg whites until stiff, then whisk into flour mixture. Line a baking sheet (32 x 22 cm) with baking paper and spray with non-stick cooking spray. Pour in flour mixture and spread out smoothly. Bake for 15 to 20 minutes. Remove from oven and turn out onto a clean, damp cloth. Spread low fat cottage cheese over and roll up. Refrigerate until ready to use.
