900.00 g spinach
250.00 g cottage cheese — smooth
50.00 g almonds — ground
3.00 eggs — extra-large, seperated
salt and freshly ground black pepper — to taste
nutmeg — ground, pinch
400.00 g puff pastry — defrosted
1.00 eggs — separated

Method:

Preheat the oven to 200 ºC (400 ºF). Spray a baking sheet with non-stick spray. Steam the spinach for about 7 minutes until tender. Drain well and process in a food processor. Turn into a mixing bowl and add the cottage cheese, almonds and 3 egg yolks. Mix and season with salt and pepper to taste and a pinch of nutmeg. Whisk the egg whites until stiff and fold into the mixture. Roll the pastry into a rectangle and spoon the filling lengthways down the centre. Lightly brush the sides of the pastry with whisked egg white and fold the dough so that the sides overlap. Turn the roll over and brush with lightly whisked egg yolk. Prick a few holes in the pastry. Cut out decorations from the remaining pastry and arrange on top. Brush with egg yolk. Bake for 20-30 minutes or until done and golden brown on top. Cool slightly and cut into slices. Serve hot.
Serves 6-8.
