Spinach rice ring

  • 250
    g
    frozen spinach
  • 750
    ml
    cooked long-grain rice, heated
  • 25
    ml
    butter
  • salt and pepper to taste
  • pinch nutmeg
  • 45
    ml
    cream
 

Method

 
Prepare the spinach as instructed on the packet. Mix with the rice while both the spinach and rice are still hot. In the meantime, spread a plastic ring mould with the butter. Add the remaining butter to the rice mixture. Season with salt, pepper and nutmeg. Add the cream, mix and lightly press the rice mixture into the prepared ring mould. Leave in a warm place for at least 7 minutes before turning out on to a serving platter. Garnish with sautéed mushrooms, if desired. Serve with chicken or meat. Serves 6.
