Ingredients (9)

CRUST
500.00 ml rice — cooked
2.00 eggs — whites only, lightly beaten
FILLING
200.00 g spinach — cooked, finely chopped
125.00 g cottage cheese — smooth
125.00 ml yoghurt — natural
2.00 eggs — beaten
1.00 lemon — zest and juice
salt and freshly ground black pepper
50.00 g cheddar cheese — finely grated

Method:

Preheat the oven to 180 ºC (350 ºF).
Mix the rice and egg whites and press onto the base and sides of a flan dish.
Place the spinach, cottage cheese, yoghurt and beaten eggs in a mixing bowl and mix thoroughly. Season to taste with the grated rind and lemon juice, salt and pepper.)
Spoon the filling into the crust and sprinkle the cheese on top.
Place in the oven and bake for about 30 minutes or until the filling has set.
