Spinach pie

    cooked rice

    egg whites, lightly beaten
  • FILLING

    cooked spinach, finely chopped
  • 125

    smooth cottage cheese
  • 125
    ml
    natural yoghurt
  • 2
    eggs, beaten
  • 1
    lemon, juice and grated rind
  • salt and pepper
  • 50
    g
    Cheddar cheese, finely grated
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Mix the rice and egg whites and press onto the base and sides of a flan dish. Place the spinach, cottage cheese, yoghurt and beaten eggs in a mixing bowl and mix thoroughly. Season to taste with the grated rind and lemon juice, salt and pepper.) Spoon the filling into the crust and sprinkle the cheese on top. Place in the oven and bake for about 30 minutes or until the filling has set.
