Ingredients (11)

300.00 g spinach
2.00 onion — finely chopped
1.00 garlic — cloves, crushed
250.00 g streaky bacon — rind removed and chopped
250.00 g cottage cheese — smooth
2.00 eggs — extra-large
25.00 ml fresh parsley — chopped
5.00 ml white pepper
2.00 ml nutmeg — ground
2.00 ml paprika
100.00 g cheddar cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 22 cm pie dish with non-stick spray. Strip the green spinach leaves from the hard, white stems and shred the leaves finely. Boil in a little water until just tender. Drain well and set aside. Stir-fry the onion, garlic and bacon until the onion is soft and the bacon slightly crisp. Blend the remaining ingredients, except half the Cheddar cheese. Add the spinach, onion and bacon mixture and mix. Turn the mixture into the prepared dish and sprinkle with the remaining Cheddar cheese. Bake for 30 minutes or until the dish has set and browned. Leave for a few minutes before serving.
