Spinach parathas

Ingredients

  • 500
    g
    wholewheat flour
  • 2
    ml
    salt
  • 2
    ml
    black pepper
  • 50
    ml
    freshly chopped coriander
  • 350
    ml
    water
  • 10
    ml
    cumin seeds
  • 16
    baby spinach leaves, washed and trimmed
  • melted butter
 

Method

10 minutes
 
1 Sift flour with salt and pepper. Add coriander and enough water to form a soft dough. Knead lightly for about 10 minutes, cover with a damp towel and leave to rest for 3 hours. 2 Knead in the cumin seeds until evenly distributed and divide dough into 8 equal balls. Roll each ball out into a 1 cm-thick round. Place 2 spinach leaves on each and fold over the dough. Roll out into 1 cm-thick circles again. 3 Place the parathas on a hot grill or fry in a saucepan with melted butter for 4 to 5 minutes, turning once. Serve spread with melted butter to accompany curry. Serves: 4 Preparation time: 50 minutes, plus resting time Cooking time: 10 minutes
